Four Ideas for a Low Carb Breakfast

 

The great thing about a low carb diet is that there are plenty of delicious options for breakfast.  If you are keen to lose weight but tired of eating processed cereal and fruit juice then you’ll love the following recipes.  Hearty and filling, these recipes are easy to make and nutritious to boot!

 Four Ideas for a Low Carb Breakfast

Scrambled eggs with smoked salmon

(2 serves)

  • 4 eggs    
  • 2 tablespoons skim milk   
  • 1 tablespoon finely-chopped chives    
  • olive oil cooking spray   
  • 4 slices smoked salmon   
  • 1 cup baby spinach
     
  1. Whisk eggs, milk, chives and salt and pepper in a jug until small bubbles appear.    
  2. Heat a non-stick frying pan over high heat. Reduce heat to low.
  3. Spray pan with oil.
  4. Beat egg mixture again and pour into pan. As egg begins to set, stir gently with a wooden spoon, tilting pan to allow uncooked egg to come in contact with the base. Cook until eggs form creamy curds. Remove pan from heat immediately.   
  5. Top scrambled eggs with  salmon and spinach. Season with salt and pepper.  Serve.

 

Cream cheese spinach omelette

(1 serving)  

  • 1 tbsp  cream cheese
  • 2 eggs 
  • 1/4 cup chopped fresh spinach leaves   
  • 1/4 teaspoon toasted sesame seed oil

 

  1. In a bowl, mix together cream cheese and spinach.
  2. In a separate bowl, beat 2 eggs.
  3. Brush sesame seed oil on the bottom of a frying pan. Preheat pan on medium heat, pour in eggs.Cook until able to flip egg.
  4. Spread cream cheese mixture onto cooked side of egg. Wait 30 seconds to ensure the other side of the egg is cooked, fold in half, wait 1 minute to melt cream cheese mixture. Remove from heat, serve.

    Note: Toasted sesame seed oil is VERY strong tasting. Be sure not to use any more than necessary or it will overpower the taste of the omelette. Just brushing it on the bottom of the pan will suffice. This is a great low carb breakfast!

 

Cottage cheese pancakes

(1 serving) 

  • 1 cup low-fat cottage cheese  
  • 2 egg whites 
  • 1 egg yolk   
  • 1 tbsp soy flour  
  • 1/2 tbsp baking powder   
  • 1tbsp artificial sweetener

 

  1. Beat the egg whites until frothy, then add baking powder and continue to beat until stiff peaks form.  
  2. In separate bowl, mix together the egg yolk, cottage cheese, soy flour and sweetener.    
  3. Combine the two mixtures and stir until just combined. 
  4. Cook on a lightly greased pan. Drop batter on surface large spoonfuls. Cook until each side is lightly browned.   
  5. Serve with mixed berries.

 

Strawberry smoothie

(1 serving)  

  • 1 cup frozen strawberries
  • 1 cup plain low fat yogurt   
  • 1 teaspoon Splenda (artificial sweetener) 
  • 20-gram scoop of protein powder

 

This one is easy. Just throw everything in the blender and mix. Enjoy!
