Quick breakfast quiche
Prep time 45 mins
Serves 6
Ingredients
- 8 slices bacon
- 120g shredded Swiss cheese
- 2 tbsp butter, melted
- 4 eggs, beaten
- ¼ cut finely chopped onion
- 1 tsp salt
- ½ cup flour
- 1 ½ cup milk
Method
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Preheat oven to 175 degrees C. Lightly grease a 23cm pie pan.
- Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth and then pour into pie pan.
- Bake in preheated oven for 35 minutes, until set. Serve hot or cold.
Five spice chicken with cucumber salad
Prep time 20 mins
Cook time 10 mins
Serves 4-6
Ingredients
- 500g chicken breast fillets, trimmed and sliced
- 1 tbsp coarsely chopped mint leaves
- 1 tsp five spice powder
- ¼ cup coarsely chopped cashews
- 1/5 cup sherry
- ¼ cup reduced soy sauce
- 1 Lebanese cucumber, chopped
- 2 tsp white wine vinegar
- 3 green onions, sliced
- 1 tbsp peanut oil
Method
- Place soy sauce, sherry, five spice powder and 1 tbsp peanut oil in a large bowl.
- Add chicken and mix to coat. Cover and refrigerate for 15 mins.
- Combine the cucumber, mint, vinegar in a bowl, stir until mixed well.
- Heat a little extra virgin olive oil in a wok or pan over medium heat.
- Cook the chicken in batches until just cooked through.
- Return all the chicken to the pan, add the green onion and cashews and cook for a further 2-3 mins.
- Serve chicken topped with cucumber salad.
Veal with braised fennel and garlic
Prep time 15 mins
Cook time 30 mins
Serves 4
Veal ingredients
- 4 veal loin steaks 100-150g
- 1 tbsp lemon juice
- 1 tbsp olive oil
Fennel and garlic ingredients
- 2 bulbs of fennel cut into quarters
- 6 cloves of garlic
- 2 tbsp olive oil
- ¼ cup water
- 1 tsp dried basil
- 1 tsp dried parsley
Method
- In a deep frying pan sauté the olive oil, fennel and garlic until lightly brown.
- Add the water and herbs.
- Cover and simmer on a low heat for 10-15 mins or until soft.
- Pre-heat another frying pan.
- Place all the veal ingredients into a bowl and leave to marinate for 10 mins.
- Place veal into the heated frying pan and cook for 3 minutes on each side.
- Serve the veal with the fennel and garlic on the side.
