BBQ Calamari Salad

Ingredients
- 400g calamari squid, cleaned
- 2 tsp olive oil
- 1 lime
- 1 lemon
- 1 red chillies
- 1 cucumber, sliced
- ½ red onion, finely chopped
- 1 garlic clove, crushed
- 1/4 cup coriander leaves
- 2 cups lettuce leaves
Method
- Preheat grill on high.
- Grate rind from ½ lime, and ½ lemon. Juice both lime and lemon. Combine rind, ½ the juice, chilli, garlic, half the oil and some salt and pepper. Pour over the squid.
- Place cucumber, coriander, onion, lettuce, remaining juice and remaining oil into a bowl and toss gently.
- Cook squid in batches on grill for 1 to 2 minutes. Toss squid with salad and serve.
