BBQ Calamari Salad

Ingredients

  • 400g calamari squid, cleaned
  • 2 tsp olive oil
  • 1 lime
  • 1 lemon
  • 1 red chillies
  • 1 cucumber, sliced
  • ½ red onion, finely chopped
  • 1 garlic clove, crushed
  • 1/4 cup coriander leaves
  • 2 cups lettuce leaves

Method

  1. Preheat grill on high.
  2. Grate rind from ½ lime, and ½ lemon. Juice both lime and lemon. Combine rind, ½ the juice, chilli, garlic, half the oil and some salt and pepper. Pour over the squid.
  3. Place cucumber, coriander, onion, lettuce, remaining juice and remaining oil into a bowl and toss gently.
  4. Cook squid in batches on grill for 1 to 2 minutes. Toss squid with salad and serve.
