Beef Soup

Ingredients
- 400g lean beef, diced
- 1 litre vegetable stock
- 4 carrot, sliced
- 4 sticks celery, chopped
- 1 onion, chopped
- 1/4 cup chopped parsley
- 400g crushed tomatoes
- 1/4 cup finely shredded basil
- 1 Tbsp rosemary, finely chopped
Method
- Bring stock to a boil in a large saucepan.
- Add beef carrot, celery, onion, parsley and tomato and simmer gently for 1 hour or until beef is tender.
