Beef Soup

Ingredients

  • 400g lean beef, diced
  • 1 litre vegetable stock
  • 4 carrot, sliced
  • 4 sticks celery, chopped
  • 1 onion, chopped
  • 1/4 cup chopped parsley
  • 400g crushed tomatoes
  • 1/4 cup finely shredded basil
  • 1 Tbsp rosemary, finely chopped

Method

  1. Bring stock to a boil in a large saucepan.
  2. Add beef carrot, celery, onion, parsley and tomato and simmer gently for 1 hour or until beef is tender.
