Beef Tomato and Pea Curry

Ingredients

  • 400g steak, cut into cubes
  • 1 medium onion, chopped
  • 2 chillies, finely chopped
  • 1 tsp olive oil
  • 1 tsp cumin seed
  • 1 tsp turmeric
  • 2 Tbsp curry powder
  • 4 garlic cloves, crushed
  • 2 tsp fresh ginger root, crushed
  • 1 cup water or beef stock
  • 1 1/2 cups peas, fresh or frozen
  • 1 1/2 cups snow peas
  • 400g tin crushed tomatoes

Method

  1. Heat oil in a heavy saucepan and gently fry onion and chilli until onion is golden.
  2. Add cumin, turmeric and curry powder and stir well.
  3. Add the beef, brown slightly and cook for 10 minutes, stirring occasionally.
  4. Add garlic and ginger, cover and cook for a further 5 minutes.
  5. Add tinned tomatoes, peas, water or stock and reduce heat. Simmer until the meat is cooked.
  6. Serve with steamed vegetables.
