Brown Rice Salad with a serve of Protein

Prep time: 10 minutes

Cook time: 20 minutes (approximately to boil rice)

Serves: 1


½ cup cooked brown rice

1 serve of cold meat of your choice, chopped

1 cup chopped celery, capsicum & cherry tomatoes

¼ avocado (optional)

Juice of ½ a lime

1 Tbsp chopped, fresh coriander

Plus 1 apple (medium sized)


  1. Mix all ingredients in a bowl. Season with a little salt & pepper and serve.

Tip: Make sure lunch is kept in the fridge or at least next to something cool like a frozen tub of yoghurt (afternoon tea) or drink bottle.
