Chicken Salad Pita + a serve of Fruit

Prep time: 10- 15 minutes

Cook time: 6 minutes to hard boil an egg

Serves: 1


½ a wholegrain/wholemeal pita bread

1 egg, hard- boiled, cooled and sliced

½ serve of shredded cooked chicken (or other cold meat)

1 cup mixed, non- starchy salad vegetables (lettuce, cucumber & tomato)

¼ avocado, sliced (optional)

Salt & pepper to season

Plus 1 apple (medium sized)


  1. Stuff the pita half with the mixed salad vegetables, egg, chicken and avocado. Season lightly with salt & pepper if desired.

Tip: Make sure lunch is kept in the fridge or at least next to something cool like a frozen tub of yoghurt (afternoon tea) or drink bottle.
