Chicken Soup

  • 1 tsp olive oil
  • 5 cloves garlic, smashed
  • 1 large brown onion
  • 2 Tbsp finely grated ginger
  • 1 Tbsp turmeric powder
  • 1 tsp curry powder
  • 400g chicken breast, cut into chunks
  • 1 litre chicken stock
  • 1 litre water
  • 4 sticks of celery, chopped
  • 1 carrot, chopped
  • 1 red capsicum, chopped
  • 1 large bunch of coriander, chopped
  • ¼ cup rice wine
  • 3 Tbsp tamari
  • 2 Tbsp of lime juice


  1. In a deep, heavy based saucepan heat olive oil over a medium heat. Add garlic, onion, ginger, turmeric and curry powder. Cook until aromatic.
  2. Add chicken and brown slightly,then add chicken stock and water. Add carrot, celery, red capsicum, tamari and rice wine. Cover and bring to the boil for 5 minutes. Reduce heat to a simmer and leave covered for 15 minutes.
  3. Turn the heat off and mix through the coriander and lime juice and then serve.
