Chicken Soup

Ingredients
- 1 tsp olive oil
- 5 cloves garlic, smashed
- 1 large brown onion
- 2 Tbsp finely grated ginger
- 1 Tbsp turmeric powder
- 1 tsp curry powder
- 400g chicken breast, cut into chunks
- 1 litre chicken stock
- 1 litre water
- 4 sticks of celery, chopped
- 1 carrot, chopped
- 1 red capsicum, chopped
- 1 large bunch of coriander, chopped
- ¼ cup rice wine
- 3 Tbsp tamari
- 2 Tbsp of lime juice
Method
- In a deep, heavy based saucepan heat olive oil over a medium heat. Add garlic, onion, ginger, turmeric and curry powder. Cook until aromatic.
- Add chicken and brown slightly,then add chicken stock and water. Add carrot, celery, red capsicum, tamari and rice wine. Cover and bring to the boil for 5 minutes. Reduce heat to a simmer and leave covered for 15 minutes.
- Turn the heat off and mix through the coriander and lime juice and then serve.
