Chicken & vegetable soup

  • 2 chicken breast
  • 2 cups chicken stock
  • 2 carrot, roughly chopped
  • 1/2 onion, roughly chopped
  • 1 clove garlic, crushed
  • 3 zucchini, roughly chopped
  • salt and pepper to taste


  1. In a medium saucepan, bring the chicken stock to boil. Roughly chop the carrot, onion and zucchini and crush the garlic. Thinly slice the chicken.
  2. Add the vegetables, garlic and chicken to the stock and simmer for 10 minutes or until the chicken is cooked.
  3. Stir the soup occasionally and if needed, add more stock or water. Season with salt and pepper to taste.
