Curried Egg wrapped in lettuce

2 hard- boiled eggs

1/2 tsp curry powder

1/2 tsp cumin powder

1/2 tsp lemon juice

A little salt and pepper to season

Lettuce leaves to serve


Cut eggs in half and remove egg yolks. Place the yolks in a small bowl and mash with a fork. Add the remaining ingredients and mix until smooth. Spoon mixture back into the egg white halves to serve. Makes two snack sized portions.

Serve each egg half wrapped in a crisp lettuce leaf.
