Eggs Poached on Tomatoes

Serves 2

Cook time: 15 minutes



2 tsp olive oil

1 large onion, finely chopped

1cm piece fresh ginger, chopped

2 cloves fresh garlic, chopped

Salt to taste

¼ tsp turmeric powder

1 red chilli, chopped

500g fresh tomatoes, chopped

Handful of fresh coriander leaves, chopped

4 eggs

2 slices wholegrain toast (1 slice per person)



Heat oil in a pan large enough to hold 4 eggs.

Add the chopped onions and saute until light golden brown. Add the chopped ginger, garlic and salt and stir for a few moments.

Add the turmeric powder and toss lightly. Add the chopped chilli and tomatoes and cook gently for a few minutes.

Toss the chopped coriander in the mixture, lower the heat.

Break the eggs on the mixture, cover the pan with a lid and cook on a low heat until the eggs are done.

Serve hot with a slice of wholegrain toast.
