Fish Vindaloo

Ingredients

  • 1 Tbsp olive oil
  • 4 cloves of garlic
  • 3 tsp fresh ginger
  • 1 tsp cinnamon
  • 2 tsp ground cardamom
  • 1 tsp fenugreek seed
  • 1 tsp hot chilli powder
  • ½ tsp sweet paprika
  • 1 tsp ground turmeric
  • 1 tsp mustard powder
  • 400g blue eyed cod, cut into 3cm cubes
  • 1 Tbsp apple cider vinegar
  • 1-2 cups vegetable stock
  • 5 cups of assorted vegetables (green beans, broccoli etc)

Method

  1. Drizzle oil into a heavy based frying pan. Cook garlic and ginger over a low heat for 5 minutes. Add spices and cook for a further 2-3 minutes until fragrant.
  2. Add fish and gently toss to coat with the spices, then pour in the apple vinegar and stock. Cover and cook over a low heat for 15-20 minutes.
  3. While the fish is cooking steam the vegetables for 5- 10 minutes.
