Fish Vindaloo
Serves: 4

Cooking time: 20-25 minutes
Ingredients
- 1 Tbsp olive oil
- 4 cloves of garlic
- 3 tsp fresh ginger
- 1 tsp cinnamon
- 2 tsp ground cardamom
- 1 tsp fenugreek seed
- 1 tsp hot chilli powder
- ½ tsp sweet paprika
- 1 tsp ground turmeric
- 1 tsp mustard powder
- 400g blue eyed cod, cut into 3cm cubes
- 1 Tbsp apple cider vinegar
- 1-2 cups vegetable stock
- 5 cups of assorted vegetables (green beans, broccoli etc)
Method
- Drizzle oil into a heavy based frying pan. Cook garlic and ginger over a low heat for 5 minutes. Add spices and cook for a further 2-3 minutes until fragrant.
- Add fish and gently toss to coat with the spices, then pour in the apple vinegar and stock. Cover and cook over a low heat for 15-20 minutes.
- While the fish is cooking steam the vegetables for 5- 10 minutes.
