Ham and Vegetable Frittata

Ingredients

  • 4 whole eggs and 2 egg whites, lightly beaten
  • 1/2 cup low fat milk
  • 4 spring onions, sliced
  • 1 zuchinni¬†sliced
  • 8 cherry tomatoes, halved
  • 4 mushrooms, sliced
  • 200g lean ham
  • 1 Tbsp chopped basil
  • 2 Tbsp grated parmesan
  • ground black pepper

Method

  1. Preheat oven to 170C.
  2. Lightly grease a 20cm ovenproof dish with a little oil in a large bowl.
  3. Whisk eggs with milk. Add remaining ingredients and stir until mixed well.
  4. Pour mixture into the flan dish and bake for 35-40 minutes, or until set.
  5. Serve with a green salad.
