Lamb Chops with Green Beans

Cook time: 15 minutes


  • 200g lamb ribs
  • salt and pepper, to season
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • 375g ripe fresh tomatoes
  • 1 tsp olive oil
  • 1 bunch fresh basil leaves, roughly torn
  • 1 tsp fresh oregano
  • 1 Tbsp freshly grated parmesan cheese
  • 50g mozzarella cheese, grated


  1. Cut the tops of the tomatoes. Put them in a bowl with the olive oil, basil leaves, oregano and grated parmesan cheese. Put in an oven for 30 minutes.
  2. Preheat either the barbeque or the skillet pan. In another bowl add the lamb, salt and pepper, lemon juice and olive oil and place on the barbeque for 4 minutes or until medium to rare. Once the lamb is cooked sprinkle the mozzarella over the lamb and let it melt slightly.
  3. Serve with steamed green beans.
