Meatballs with Tomato Sauce

Serves: 2

Ingredients

400g raw minced beef (premium or low fat)

2 eggs

½ Tbsp wholemeal breadcrumbs

½ tsp chilli flakes

½ tsp ground coriander

Pinch of ground nutmeg

1 spring onion, chopped finely

1 piece of ginger (about 2cm), peeled & chopped finely

1 clove garlic, peeled & chopped finely

Salt and pepper

Tomato sauce ingredients:

2 tsp olive oil

1 onion, peeled & chopped finely

2 cloves garlic, peeled & chopped finely

400g tinned tomatoes (reduced salt and no added sugar)

1 Tbsp mixed Italian herbs

Salt & pepper

Paprika

1 cup wholemeal pasta

Method

  1. Preheat oven to 180°c.
  2. Mix the minced beef with the eggs, breadcrumbs, chilli, coriander and nutmeg, the spring onions, ginger and garlic. Season with a little salt & pepper and shape into small balls. Place on a wire rack on a tray (so that the excess fat can drip away) and bake for 15-20 minutes or until golden brown.
  3. For the tomato sauce: Heat the oil and gently cook the onions and garlic on a very low heat until soft. Add the tomatoes and simmer for about 20 minutes. Add the herbs, season with salt and pepper and paprika to taste. While waiting for the sauce to cook through add the pasta to a pot of boiling water on the stove top and simmer for 15-20 minutes or until tender.
  4. To serve, spoon the sauce onto plates and place the meatballs on top. Serve with ½ a cup of cooked pasta per person.
