Mini frittatas

Ingredients

  • 4 eggs, whisked
  • 1 small onion, finely chopped
  • 2 rashes of bacon, finely chopped
  • 1/2 zucchini, grated
  • 1/2 tomato, finely chopped
  • 1/2 carrot, grated
  • 50g cottage cheese
  • Salt and Pepper to taste
  • Olive oil spray

Method

  1. Pre-heat the oven to 200C.
  2. Place all the ingredients in a bowl and combine.
  3. Lightly oil a muffin tin and evenly distribute filling.
  4. Place in the oven at 200C for 10 minutes, or until golden.
