Muesli with Apricots, Almonds & Coconut

Ingredients

  • 1/2 cup rolled oats
  • 2 dried apricots, chopped finely
  • 2 Tbsp almonds, or other nuts/seeds
  • 2 tsp shredded coconut
  • 1 tsp cinnamon
  • 1 cup milk (soy or cow’s milk)
  • 1 cup yoghurt (soy or Greek)

Method

  1. In a bowl, combine the oats, apricots, almonds, coconut and cinnamon.
  2. Divide into serving bowls and top with milk & yoghurt.
