Mediterranean Grilled Mushrooms & Prawns Recipe

6 large fresh field mushrooms
12 large prawns
1 tomato, diced
Juice of 1 lime
Fresh parsley, chopped
1 spring onion, sliced
1 red chilli, sliced
1 clove garlic
Handful of fresh basil
½ cup seafood stock, salt reduced
Salt & pepper to season
- Grill the mushrooms and set aside.
- Grill the prawns (be careful not to overcook).
- Place mushrooms and prawns in a pan with the diced tomato, half the lime juice, parsley, spring onion, chilli, garlic, basil and stock and simmer until reduced.
- Add a little salt & pepper to taste and serve drizzled with the remaining lime juice.
