Savoury ham and herb ricotta muffins with small salad

 Ingredients

1 ½ cups ricotta cheese

50g ham, finely chopped

1 Tbsp dried herbs

1 egg

25g parmesan cheese, grated

Small side salad consisting of lettuce, tomato, cucumber, capsicum etc

Method

Pre-heat to 180°C and line 6 muffin holes in a muffin tin with grease proof paper.

Mix all ingredients in a bowl until well combined and creamy.

Divide mixture evenly between the muffin holes.

Bake in the oven for 15- 20 minutes or until set.

Serve with the small side salad.
