Scrambled Tofu with Herbs and Mushroom

Ingredients

  • 2 cups of hard tofu, crumbled
  • 1 tsp olive oil
  • 1/4 Spanish onion, finely chopped
  • 1 garlic clove, crushed
  • 1/4 cup of cherry tomatoes, finely chopped
  • 1/4 cup of mushrooms, sliced
  • 1 Tbsp parsley, chopped
  • 1/2 tsp fresh chilli, optional
  • 2 slices of wholemeal or multi-grain toast
  • Salt & pepper to taste

Method

  1. Heat oil in fry-pan over medium heat
  2. Sauté onion, mushrooms and tomato in the pan for about 5 minutes.
  3. Add remaining ingredients and cook through, approximately 7 minutes.
  4. Serve with toast and salt & pepper to taste
