Scrambled Tofu with Herbs and Mushroom

Ingredients
- 2 cups of hard tofu, crumbled
- 1 tsp olive oil
- 1/4 Spanish onion, finely chopped
- 1 garlic clove, crushed
- 1/4 cup of cherry tomatoes, finely chopped
- 1/4 cup of mushrooms, sliced
- 1 Tbsp parsley, chopped
- 1/2 tsp fresh chilli, optional
- 2 slices of wholemeal or multi-grain toast
- Salt & pepper to taste
Method
- Heat oil in fry-pan over medium heat
- Sauté onion, mushrooms and tomato in the pan for about 5 minutes.
- Add remaining ingredients and cook through, approximately 7 minutes.
- Serve with toast and salt & pepper to taste
