Spinach and egg pots

Cook time: 15 minutes
Serves: 2

Ingredients

  • 250g pkt frozen spinach
  • 4 eggs
  • 4 Tbsp grated cheese
  • 2 rasher bacon, trimmed of fat and finely diced

Method

  1. Pre-heat oven to 200 °C
  2. Defrost spinach and divide evenly between 4 greased ramekins.
  3. Break an egg into each pot and sprinkle with cheese and bacon.
  4. Place pots onto a baking tray and bake for 10-15 minutes.
