Ingredients
Wholegrain/wholemeal bread 1 slice
½ serve of shredded chicken (or other cold meat)
2 thin slices of cheese
Handful of spinach leaves
1 sliced tomato
1 cup mixed, non- starchy salad vegetables (lettuce, cucumber & tomato, onion)
Vinaigrette: 1 tsp olive oil + 1 tsp balsamic vinegar, ¼ tsp minced garlic, salt & pepper (optional)
Plus 6 dried apricots
Method
- Preheat oven to grill at 180°c while toasting bread in the toaster.
- Top toast with spinach leaves, sliced tomato, chicken and cheese slices and place under the grill for a couple of minutes until cheese has melted and lightly browned.
- Serve alongside salad vegetables drizzled with home- made vinaigrette if desired.
Tip: Make sure lunch is kept in the fridge or at least next to something cool like a frozen tub of yoghurt (afternoon tea) or drink bottle.
