Veal Stifado

Serves: 4

  • 1 tsp of olive oil
  • 8 pearl onions
  • 1 garlic cloves, chopped
  • 400g of veal, cubed
  • 1 Tbsp of tomato puree
  • 1/2 cup red wine
  • 1/2 cup red wine vinegar
  • 2 bay leaves
  • 1/4 tsp of grounded cloves
  • chopped parsley to garnish


  1. Heat the oil in a large heavy saucepan. Add onion and garlic and fry for 5 minutes.
  2. Add the veal and brown on both sides. Pour in the tomato puree, wine and vinegar. Add the bay leaves and cloves and season and bring to boil. Simmer for 45 minutes.
  3. Remove the lid and let it sit for at least 1 hour and serve hot with chopped parsley.
